This Christmas our family was blessed to spend some time at
Sky Ranch Ute Trail in the beautiful snow covered mountains of Colorado. This was a first for us to see Sky Ranch
Family Camp covered in gorgeous mounds of pure white snow and all the trees
perfectly flocked. The time away was
intentional to make some incredible memories without the fuss of tv’s, wifi,
cell phones or internet! But the added snow created the perfect backdrop of us
all spending time together snuggled by the fireplace with our quilts coloring,
reading, painting, playing games, or cooking!
A highlight of our vacation was the opportunity to gain
wisdom from and spend quality time with our friends Angie and Skeet Tingle. (Ute Trail and Family Ministries Director). Angie shared with us
all some of their incredible Family Christmas Traditions that they have been
doing with their family for the past 25+ years.
The Tingle family are incredible and inspiring to listen to, to watch
and to learn from.
Family traditions are important to pass down year after year
and yet learning new traditions (borrowed from another family maybe?) each year
to carry over to the next creates a freshness and excitement within
everyone! So, this year we jumped right
in (the kitchen J)
and experienced cooking traditions with Angie Tingle. I will share with you some new added recipes
that our family now will be incorporating into our favorite time of the year!
Angie’s Salsa
2 cups fresh cilantro (1 full bundle, leaves not stems)
4 fresh green onions
2 limes, add fresh juice from limes
3 fresh roasted jalapeno peppers (including seeds)
(cook jalapenos in skillet on stovetop till evenly blackened)
Combine cilantro, green onions lime juice and roasted
jalapeƱos (including seeds)
into a blender or food processor
1 clove fresh minced garlic
17 fresh Roma tomatoes
1 tablespoon salt
Put all remaining
ingredients into the food processor with the tomatoes.
Pulse until well combined.
You
can eat it right away, or store in the fridge for up to 7 days.
