Who likes BRUNCH?....

I do!!....Today I am in the mood for some "Brunch" like foods...the weather is still a little crisp, and the sun is shinning.  I have my cup of coffee while sitting at the computer woking on Sky Ranch SkyMom Events and a piece of a breakfast casserole just sounds so yummy...so I thought it might for you too....
so I thought I would share with you today some of my favorite BRUNCH foods...enjoy!

Sausage Rolls

2 packages cresent rolls
1 lb sausage, browned
1 8 ounce container of cream cheese

Roll out cresent tolls and press seams together.  Mix sausage and cream cheese.  Spread ½ sausage mixture on cresent roll to within 1 inch of edge.  Roll lengthwise.  Refrigerate.  Cut into ½ inch slices.  Bake 12 to 15 minutes at 375.



Breakfast Muffins

2 sticks real butter, melted
2 cups self rising flour
8 oz sour cream

Preheat oven to 350.  Mix all ingredients together.  Spoon into muffin pan – no need to line or spray with non stick spray.  For regular muffins, bake 20-25 minutes – until toothpick pulls clean.  For Mini muffins, bake 10-15 minutes.  Makes about 8 regular muffins and lots of mini muffins.  I have only done mini muffins and people always love them.



Apple Dumpling

2 cresent rolls
2 granny smith apples
1 ½ stick butter
1 ½ cup sugar
1 tsp cinnamon
1 12 ounce Mt Dew or Mello Yellow

Peel apples.  Wrap in rolls.  Melt butter and mix in cinnamon and sugar.  Get 9 x 12 dish.  Preheat 350.  Pour sugar mix over rolls.  Pour Mt. Dew over  Bake 350 for 1 hour.  You can serve ice cream over if wanted.



Breakfast Casserole

1 pound ground pork sausage
10 white sandwich bread slices, cubed (6 cups)
2 cups (8 ounces) sharp cheddar cheese
6 large eggs
2 cups milk
1 tsp salt
1 tsp dry mustard
¼ tsp Worcestershire sauce

Cook sausage in a skillet over med heat, stirring until crumbles and is no longer pink, drain well.  Place bread crumbles in a lightly greased 13 x 9  inch baking dish  -- sprinkle bread evenly with cheese to top sausage.  Whisk together eggs and remaining ingredients.  Cover and chill casserole for 8 hours.  Let stand room temp 30 minutes.  Bake at 350 for 45 minutes or until set.  Let stand 5 minutes before serving.
