Mandarin Orange & Almond Salad

With the weather getting warmer I can't wait to serve this on a bright sunny day... a special thanks to Terri Flannagan for sharing this recipe with us. :)

Mandarin Orange & Almond Salad

Dressing:
1/3 cup oil
1/4 cup balsamic vinegar
1/4 cup sugar
1 tsp chopped parsley
1/2 tsp salt
1/2 tsp tabasco or hot sauce
dash pepper

Mix, shake and chill 1 hour before serving

Salad:
1/2 cup slivered almonds - caramelized (to caramelize simply put almonds in skillet with 3 Tbsp of sugar over med. heat. They brown quickly so keep watching so they don't burn - then just put on wax paper and crush.)
Bag a Spring Salad mix or other preferred lettuce mix (mixture of spinach and torn lettuce head good!)
1 cup sliced celery
1/2 cup sliced green inion
1 can mandarin oranges (drained) (soak in dressing before serving for extra flavor)

*Don't add all the dressing at once as sometimes it can be too much for the amount of lettuce you have.
